Marshall’s Favorite Burritos

Ingredients:

1 cup instant rice (brown or white)

6 oz. dehydrated refried beans

7 oz. cooked chicken in a sealed, no-drain package (find it near tuna in the store)

1 package taco seasoning (OR 2 tsp. chili powder, 2 tsp. cumin, 1 tsp. oregano, 1/2 tsp. garlic powder)

2 handfuls shredded cheese

4 tortillas

Pre-trip Prep

In a sealable bag, combine rice, beans, and taco seasoning.

In a separate sealable bag, store shredded cheese.

In another sealable bag, roll and store tortillas.

Place the 3 sealed bags and bag of chicken in a plastic bag labeled ‘Burrito Meal’.

How to prepare on trail

Boil ~2 1/2 cups water in pot over camp stove (add a bit more water as needed, based on altitude). Since it’s being boiled, the water doesn’t necessarily need to be filtered/purified, however if you’ll be transporting the water in your drinking bottle, be sure to filter/purify so as to not risk contaminating your bottle.

When water boils, pour in bag of dry goods (rice, beans, seasoning) and bag of chicken.

Stir constantly to avoid burning. Cook for 5 minutes.

Spread burrito mixture on tortillas, and top with shredded cheese.

Serves 2 hungry hikers. 

Forrest’s Trail Pizza

Ingredients:

4 cups flour

6 tsp. baking powder

2 tsp. salt

1/2 cup dry milk (find it in the baking section of the store)

15 oz. plastic bottle pizza sauce

4 cups shredded cheese

1 package turkey pepperoni

Small amount of oil to coat pan

Pre-trip Prep

In a sealable bag, combine flour, baking powder, salt, and dry milk.

In a small sealable bottle, or in 2 sealable bags, store a few tsp. oil.

In another sealable bag, store shredded cheese.

Place 3 sealed bags, bottle of pizza sauce, and package of turkey pepperoni in a plastic bag labeled ‘Pizza Meal’.

How to prepare on trail

To start, add 1/2 cup filtered/purified water to the dry goods bag. Seal and start mixing by squeezing bag. Add more water as necessary to obtain a (not-too-runny) spreadable dough.

Meanwhile, warm half of oil in pan over camp stove.

When desired dough consistency is reached, spread half of the dough in pan. Spread evenly.

Pour half of pizza sauce onto dough. Add turkey pepperoni and cheese.

Place lid on pan and allow to cook for 8 minutes.

Use a spatula to remove pizza from pan. 1 pizza is ready to eat!

Pour remaining oil into pan.

Spread remaining dough in pan.

Pour remaining pizza sauce onto dough. Add turkey pepperoni and cheese.

Place lid on pan and allow to cook for 8 minutes.

2 pizzas serve 2-3 hungry hikers.
